Frozen Custard traces its
beginnings to the early 1900s at the carnivals in Coney Island, New York.
Frozen Custard is unique in texture and flavor that sets it apart
from traditional ice cream; this is due to the differences in ingredients and production.
Real Frozen Custard must contain at least 10 percent butterfat and 1.4 percent egg yolk.
Traditional ice cream must only contain 10 percent butterfat. The other difference is the
freezing temperature used to make Frozen Custard, the temperature is much higher that
traditional ice cream; and thereby eliminates the ice crystals that are found in ice
cream. The lack of ice crystals in Frozen Custard therefore yields a much smoother
product.
